Thank you so much for all your support this year. It has been great to see so many more people embracing the flexitarian diet. Looking ahead to 2018, the plant-based movement shows no signs of slowing down. Currently over 40% of the UK population is now making a conscious effort to reduce its meat consumption.

My personal flexitarian journey has led me to not only reduce meat in my diet but also fish and dairy as often they also have poor environmental and animal welfare impacts. This is why there is an increasing number of vegan recipes on the blog.

Most of us are lucky enough to make food decisions three times a day, seven days a week. That is quite a lot indeed. So yes what you put on your plate can make a difference. A difference to your health, to the planet and to animal welfare.

Taking a look at the past 12 months, I have compiled the list of your favourite recipes (according the most likes, pins, tweets and so on…). There have been a few changes from 2016 except for this Sweet Potato, Spinach & Butter Bean Stew which is still your number 1. I love it too 🙂

Sweet Potato, Spinach & Butter Bean Paprika Stew [vegan] [gluten free] by The Flexitarian

I am so glad that this fragrant Sweet Potato, Spinach & Butter Bean Stew is once again making your top 5. I originally created this recipe for Sutton People’s Kitchen‘s as part of Healthy Sutton campaign. With fed many people that day on Sutton high street. This recipe can easily be halved when cooking for a family and is one of my all time favourite.

Dreamy Chocolate Mousse [vegan] [gluten free] by The Flexitarian

Light and delicious, this vegan chocolate mousse is such a scrumptious dessert. Made with aquafaba, this recipe has no egg, no cream and only contains 1 tablespoon of sugar.

This Chocolate Courgette Cake was one of my first vegan bake. Bound to please all chocoholics, it can easily double as a birthday cake.

No egg vegan sandwich

An egg sandwich without the eggs! This recipe is great for lunch boxes and picnics.

Mediterranean Cauliflower Rice Crustless Quiche [vegetarian] by The Flexitarian

Cauliflower rice makes this crustless quiche hearty and moist. Easy, low carb and super tasty this dish is best eaten cold.
