Thank you so much for all your support this year. It has been great to see so many more people embracing the flexitarian diet. Looking ahead to 2018, the plant-based movement shows no signs of slowing down. Currently over 40% of the UK population is now making a conscious effort to reduce its meat consumption.
My personal flexitarian journey has led me to not only reduce meat in my diet but also fish and dairy as often they also have poor environmental and animal welfare impacts. This is why there is an increasing number of vegan recipes on the blog.
Most of us are lucky enough to make food decisions three times a day, seven days a week. That is quite a lot indeed. So yes what you put on your plate can make a difference. A difference to your health, to the planet and to animal welfare.

I originally created this recipe for Sutton People’s Kitchen‘s as part of Healthy Sutton campaign. With fed many people that day on Sutton high street. This recipe can easily be halved when cooking for a family and is one of my all time favourite.
