Made with real avocados (rather than avocado oil), it is seasoned with lime juice and Dijon mustard. How to make this avocado mayo
The easiest way to make this recipe is to whizz together the avocado flesh, lime juice, garlic and Dijon mustard in a blender. Depending on the limes you are using you might need more or less lime juice. The mayonnaise will be quite thick at first so you will need to add water little by little until you get your desired consistency.
Go slowly as it is always easier to add more water rather than to try to remove some.
Once made, transfer the avocado mayo to an airtight container. It will keep in the fridge for up to three days. Because it is made from fresh avocado, it might oxidise with time and change colour.
