How to Make Peach Bruschetta
Step 1 – Toast the Bread
Preheat the oven to 200°C / 180°C fan / 390°F.
Arrange the baguette slices in a single layer on a large baking tray, making sure they aren’t overlapping. Brush or lightly spray both sides with olive oil so they become beautifully crisp as they bake.
Toast for 8–10 minutes, turning halfway through if needed, until the bread is golden around the edges and crisp on the outside.
As soon as the slices come out of the oven, rub one side of each piece with the cut side of a garlic clove. The warmth of the bread gently releases the garlic’s flavour without making it overpowering.

FOR THE WHIPPED RICOTTA
- 250 g ricotta cheese
- 1 Tbsp fresh lemon juice
- 1/2 Tbsp extra-virgin olive oil
- 1 small garlic clove grated
- 1/4 Tbsp lemon zest to taste
FOR THE BRUSCHETTAS
- 2 ripe peaches
- 12 slices of baguette about 2 cm [3/4inch] thick
- olive oil
- 1 large garlic clove
- 1 small handful of rocket
- 1 small handful of salted pistachios finely chopped
- mint leaves finely chopped
- salt & pepper to taste
Instructions
