Just before Christmas I was sent a copy of Keep it Vegan by Áine Carlin, food and fashion blogger at PeaSoup. The arrival of Keep it Vegan could not have been more timely as I was preparing for Veganuary. As I started browsing the book, I was struck straight away by the diversity and simplicity of most of the dishes.
Since embarking on Veganuary, I have now been dipping in and out of Keep it Vegan, enjoying its delicious vegan recipes. A big plus for me is that Áine favours standard ingredients that you can easily find in the supermarket.
Keep it Vegan blends different cuisines together from Mexican-Style Lasagna, Indian-Spiced Tacos, Sweet Potato Sushi, Swedish-Style VegBalls to Smoky Moroccan Chickpea Stew. You’ll also find some traditional British fare such as Asparagus & Minted Pea Red Onion Tart or Stuffed Mushrooms Burgers.
Organised into Breakfast, Brunch & More, Midday Meals & Simple Suppers, Something Special, Sides & Sauces and Sweet Treats, Keep it Vegan is very versatile. Whether you are a seasoned vegan or just vegan-curious, this is the kind of book you can easily cook from during the week but which also comes very handy when entertaining. Most recipes have beautiful photography with fresh and colourful styling. The book also includes a handy Vegan Storecupboard Essentials list.
Some of my favourite recipes so far include: Rosemary and Pear French Toast, Sweet Potato & Kiwi Soup, Mexican-Style Lasagna, Smoky Moroccan Chickpea Stew & Fudgy Brownies.
