Enjoying them for breakfast in this flavourful overnight porridge, infused with cardamom and ginger, feels like such a treat.
Simply soak the oats the night before and serve them chilled with fresh fruit for a refreshing and nourishing start to the day.
I like to use jumbo rolled oats which are perfect for this overnight porridge, as they retain a deliciously hearty texture after soaking. Unlike finer oats, which can become too soft, jumbo oats provide a satisfying bite. They’re also packed with fibre, helping to keep you full and energised throughout the morning.

Ingredients
- 150 g organic jumbo rolled oats
- 500 ml organic oat milk
- 3 Tbsp shelled hemp
- 2 ripe organic apricots
- 1 handful organic blueberry
- 1/2 tsp ground ginger
- seeds of 2 cardamom pods
- 4 whole organic almonds
- chopped toasted organic almonds
- few mint leaves – to taste
- agave syrup – honey or maple syrup (to taste)
Instructions
- Pour the milk, oats and shelled hemp into a container or jar. Close the lid and shake well. Cover and leave in the fridge overnight.150 g organic jumbo rolled oats, 500 ml organic oat milk, 3 Tbsp shelled hemp
- When ready to use, add ginger and cardamom seeds. Mix together.1/2 tsp ground ginger, seeds of 2 cardamom pods
- Share evenly between two bowls.
- Top with sliced apricots, blueberries, whole almonds and toasted almonds.2 ripe organic apricots, 1 handful organic blueberry, 4 whole organic almonds, chopped toasted organic almonds
- Serve with a sprinkle of mint leaves and the sweetener of your choice.few mint leaves – to taste, agave syrup – honey or maple syrup (to taste)
