Seasonal Recipes for May

Goodbye April, May is one of the best months for seasonal cooking in the UK, as spring produce reaches its peak and meals become lighter, fresher and more colourful. It’s the perfect time to enjoy vibrant vegetables like asparagus, peas and spinach, alongside new potatoes and the last of the season’s rhubarb.

What’s in season in May in the UK

May brings an abundance of fresh, green produce that’s perfect for simple, flavourful cooking.

Vegetables in season

  • Asparagus – At its peak; best roasted, grilled or lightly steamed
  • Peas – Sweet and tender, ideal for pasta, risotto and salads
  • Spinach – Fresh and delicate, perfect for quick meals
  • Spring greens – Light and versatile for sides or stir-fries
  • New potatoes – Waxy and ideal for boiling, roasting or salads
  • Broad beans – Nutty and slightly sweet, great in spring dishes

 

Fruits in season

  • Rhubarb – Still going strong; perfect for desserts and breakfast
  • Strawberries (early season) – Starting to appear towards the end of May

Seasonal cooking at this time of year is all about keeping things simple and letting fresh ingredients shine. Look out also for: broccoli, carrot, lettuce, new potato, radish, and kiwi.
