Bursting with flavours, this creamy and fragrant vegan one-pot split pea curry is a complete meal on its own. Mildly spiced so that the whole family can enjoy it. I like to eat it with brown rice and plenty of coriander (a third of each as you can see from the picture above!).
This recipe happened by accident as I was having a bit of a clear out of my kitchen cupboards and fridge. I did not intend to post it on the blog, but it was so moreish it would have been rude not to share it 🙂 This was my first #Veganuary meal for 2017.
Like most curried dishes, it is even better the day after so you can look forward to a tasty packed lunch.
I’ve made this a couple of times and it doesn’t disappoint! It freezes really well, too, so it’s perfect to make a batch up and then pop it in the freezer and have a warm, filling, healthy lunch. It’s good to have more ‘traditional’ veg in it. Id heartily recommend.
Thank you. So glad you enjoyed it!
