Sweet Potato Recipes

Great all-rounders, sweet potatoes are incredibly versatile and ideal to create tasty vegetarian and vegan recipes. Sweeter than ordinary potatoes, sweet potatoes come in a variety of colours with flesh ranging from white to orange and even purple. According to the Harvard School of Public Health "sweet potatoes with orange flesh are richest in beta-carotene. Sweet potatoes with purple flesh are richer in anthocyanins." Both are phytonutrients that help promote good health. Sweet potatoes are known to be nutritional stars and we should all be including them regularly in our diets.

How to cook sweet potato?

Sweet potatoes are fantastic mashed, roasted or baked. They cook much quicker than white potatoes, so watch out the cooking time or they will end up being too soft. Sweet potatoes are a fantastic addition to vegetarian and vegan recipes. They will liven up a veggie chilli, casserole, curry, fritters, soup etc.. Adaptable, they are a fantastic choice for baked goods adding natural sweetness to biscuits, bread, cakes, cookies, muffins and even pies. What pairs well with sweet potatoes?

Versatile, sweet potatoes pair with both sweet and savoury flavours such as fruits, ginger, vanilla, cumin, curry, cinnamon, lime, nutmeg, maple syrup, parsley, coriander, soy sauce etc.. Pulses and beans are also a match made in heaven with sweet potatoes.
