How to make these no-bake chocolate oat cookies
Ingredients
To make these no-bake chocolate oat cookies you will need:
- dates
- smooth plain peanut butter
- coconut oil
- rolled oats
- dark chocolate chips
- vanilla extract
- salt
Step 1: Whizz the dates to a paste
Whizz the dates in a blender until you have a smooth paste.

Step 2: Melt the peanut butter
In a saucepan, heat together the peanut butter, dates, and coconut oil over low heat. Stir until the mixture is completely smooth. Remove from the heat. Stir in the vanilla extract and salt.

Step 3: Add the rest of the ingredients
Stir in the chocolate chips and the oats until well combined.

Step 4: Shape the cookies
All that is left to do is divide the oat mixture into around 28 balls and place them on 2 oven trays lined with parchment paper, then press each ball into a cookie shape. For convenience, I like to use a small-sized cookie scoop. It is very handy for creating evenly shaped cookies. Each scoop equates to 1 tablespoon. Alternatively, you can use a tablespoon and shape the cookies with your hands.


Step 5: Add the chocolate drizzle
Melt the remaining chocolate chips in a saucepan or in the microwave and drizzle over the chocolate oat cookies. It’s entirely optional of course!

Step 6: Refrigerate the cookies
The cookies are then refrigerated for at least 2 hours to harden.

Storing Instructions
Short-Term Storage
These cookies need to be kept in the fridge where they will last for up to 2 weeks in an airtight container.
Freezing Instructions
- Allow cookies to set completely at room temperature.
- Place cookies in a single layer on a baking sheet and freeze until solid (about 1 hour).
- Transfer frozen cookies to a freezer-safe container or zip-top bag, separating layers with parchment paper.
- Freeze for up to 3 months.
- To thaw, place cookies on a plate at room temperature for about 30 minutes.
