Seasonal Recipes For April

While March still feels a bit wintery, April marks the true arrival of spring in the UK, bringing a fresh wave of vibrant, green produce and lighter flavours to the kitchen. As the days grow longer and warmer, it’s the perfect time to move away from heavy winter meals and embrace seasonal ingredients like asparagus, spinach, watercress and early carrots.
 
This guide covers everything you need to know about April seasonal produce in the UK, along with simple, delicious recipe ideas to help you make the most of what’s fresh, affordable and full of flavour right now just before a warmer month of May.

What’s in season in April in the UK

April is one of the most exciting months for seasonal eating, with the first real signs of spring produce appearing.

Vegetables in season

  • Asparagus – One of the highlights of spring; best simply roasted or steamed
  • Spinach – Tender and fresh, perfect for salads, curries and pasta
  • Watercress – Peppery and vibrant, ideal for soups and salads
  • Spring greens – Light and slightly sweet, great as a side or stir-fry
  • New potatoes – Waxy and delicate, perfect for boiling and salads
  • Carrots (early crop) – Sweeter and more tender than winter varieties

 

Fruit in season

  • Rhubarb – Still in peak season, perfect for desserts and compotes

Also look out for broccoli, radish PLUS banana and kiwi.
